1. Description of Core Constituents of Foods: Understanding of biomolecular composition of raw fruits, vegetables and meats. Alteration in chemical constituents during standard food preparation (cooking/processing) approaches. Changes in bonding, composition and activity of water during food preparation.
2. Food Flavor, Color and Aroma: Molecular basis of flavor, aroma and color of foods; changes during standard food processing methods.
3. Biochemical transformations underlying food processing; implications on flavor, color and aroma. Production of food products with corresponding enzymes such as: high-fructose corn syrup (a-amylase, glucose isomerase), Cheese and dairy products (chymosin, b-galactosidase), Bread making/baking (groups of enzymes), Malt brewing (a-amylase, protease), fruit juices (pectic enzyme). Immobilized enzymes for analytical processes, starch to fructose conversion. Pasteurization of milk.
4. Additives, Contaminants and Adulterants: Molecular basis of additional ingredients that are intentional, incidental and/or hazardous additives. Introduction to chemical basis of preservative action. Established chemical measures of food safety.
5. Analytical Methods and Approaches: for study of composition, color, texture, flavor and aroma. Detection and quantification of hazardous substances. Introduction to global regulatory framework of food safety. Detection of chemical adulterants and detect antibiotic residues in foods (IR spectrometer), Colorimetric detection of pesticides and food additives (UV-vis spectrometer), pesticide residue and veterinary drugs in foods (LC-Mass analysis).
6. Hands-on Experiments: Adulteration in edible oil, added food colors/dyes and sugars in the food items and soft drinks can be tested /detected by simple demonstration based experiments. Students would be able to test the samples of food items/soft drink by simple instruments such as: polarimeter, chromameter and UV-visible spectrometer. The details are provided in Annexure II.

Dr. Pankaj Khanna is a Carbonate Sedimentologist in the Discipline of Earth Sciences at IIT Gandhinagar. Pankaj’s work integrates both field and laboratory investigations, from modern to ancient reefs, and from qualitative to quantitative assessment of carbonate depositional systems. He has conducted fieldwork and training on three continents and in more than ten countries from India to Americas. He has worked on/studied modern reefs in Gulf of Mexico, Belize, Maldives, and currently working on Lakshadweep reefs. He has also participated on a research expedition onboard R/V Falkor, mapping south Texas banks (south Texas Shelf), as well as led a research expedition in Red Sea (Al-Wajh)

Empanelled as PHE Expert under ‘Swachh Bharat Mission’ of the Ministry of Urban and recognized PHE expert of MES of Ministry of Defence. Apart from other infrastructure works of MES, planned, Designed, tendered and executed several water treatment schemes, sewer networks and wastewater treatment, including reuse projects. Authored several technical papers on related subjects, the most relevant of which is chapter 18, “COMMON MISTAKES IN PLANNING OF SEWER NETWORKS AND STPs” in the e-book (Environmental Contaminants: Measurement, Modelling and Control) published by IIT Kanpur from Springer Publisher, Singapore. Drafted specifications for conveyance, treatment and recycling of wastewater in Defence establishments and prepared Estimating Data for sewage treatment schemes of MES.

Prof. Bordia is the George J. Bishop, III Professor of Materials Science and Engineering at Clemson University and Guest Professor Materials Engineering and KPCSD at IIT Gandhinagar. He received his B.Tech from IIT, Kanpur, India and his M.S. and Ph.D. from Cornell University, Ithaca, NY, USA. His research is at the intersection of materials and mechanics and is focused on complex material systems for energy, extreme environment, and medical applications. About the Instructor
Ravi N. Banavar is currently an Institute Chair Professor in Systems and Control Engineering at IIT Bombay. He received his B.Tech. in Mechanical Engineering from IIT Madras (1986), his Masters (Mechanical, 1988) and Ph.D. (Aerospace, 1992) degrees from Clemson University and the University of Texas at Austin, respectively. He had a brief teaching stint at UCLA during 1991–92, soon after which he joined the Systems and Control Engineering group at IIT Bombay in early 1993. From 2009 onwards, during his tenure as the Convener of the group, the strength of the group grew from 5 to 9 members, with academic strengths in nonlinear control, switched systems, optimisation, geometric mechanics, formation and cooperative control, robotics and adaptive control. He has spent a few sabbatical breaks at UCLA (Los Angeles), IISc (Bangalore) and LSS (Supelec, France.) His research interests are broadly in the field of geometric mechanics, nonlinear and optimal control, with applications to electromechanical and aerospace engineering problems. He is an Associate Editor of the Elsevier journal, Systems and Control Letters, on the Editorial Advisory Board of the Taylor and Francis publication, The International Journal of Control, and a Technical Associate Editor of the IEEE Control Systems Society magazine.

Cynthia Campoy Brophy is an Artist-in-Residence at IIT Gandhinagar. She has worked in the nonprofit sector for many years, with a focus on youth empowerment and the arts. She began her career at The Museum of Contemporary Art and left to launch a nonprofit arts education organization, artworxLA. From founding the organization, to expanding it and eventually passing it on to the next generation of leadership, she worked to link existing resources to young people who lacked access to social, educational, and creative opportunities. She participated in youth empowerment efforts locally and nationally, as an advisory board member and speaker, has been invited to participate in professional learning opportunities including Harvard Graduate School of Education’s Scaling for Impact program and Stanford University’s Graduate School of Business Executive Program for Nonprofit Leaders/Arts. She has recently studied mediation at Loyola Law School's Center for Conflict Resolution. Current projects include the creation and facilitation of a Resourcing Lab, a curriculum providing skills-building and wellness practices to frontline workers post-Covid; the conceptualization and design of a Centering Center, a multi-sensory space for respite and rejuvenation; the launch of Create Protest, an online marketplace for artist designed statements and resources for activism.

About the Instructor
Prof. Jean-Philippe Ansermet is a Swiss Physicist at École Polytechnique Fédérale de Lausanne [EPFL]. His research focuses on the fabrication and properties of nanostructured materials as well as spintronics. He obtained a diploma as a Physics Engineer at EPFL in 1980. He went on to get a PhD from the University of Illinois at Urbana-Champaign, where, from 1985 to 1987, he pursued as a post-doc on solid-state NMR studies of molecules bound to the surface of catalysts. From 1987 to 1992, he worked at the materials research center of Ciba-Geigy, on polymers for microelectronics, composites, dielectrics, and organic charge transfer complexes. In March 1992, as a Professor of Experimental Physics, he developed a laboratory on the theme of nanostructured materials and turned full Professor in 1995. Since 1992, he has taught classical mechanics, first to future engineering students, and since 2004 to Physics majors. Since 2000, he has taught thermodynamics also, to the same group of students. Since 1998, he has offered a spintronics and spin dynamics graduate coursed. His research activities include the fabrication and properties of magnetic nanostructures produced by electrodeposition. His involvement since the early days of spintronics has allowed him to gain recognition for his work on giant magnetoresistance (CPP-GMR), and magnetic relaxation of single nanostructures. He was among the leading groups demonstrating magnetisation reversal by spin-polarised currents. Furthermore, his group uses nuclear magnetic resonance, on the one hand, as means of investigation of surfaces and electrodes, on the other hand, as a local probe of the electronic properties of complex ferromagnetic oxides.

Dr Monal K. Desai has completed MA and MPhil in English Language Teaching and PhD in English. Her primary research includes Blended Learning (amalgamation of online and face-to-face learning) to enhance learners’ English language skills. She has eleven years of teaching experience at undergraduate and postgraduate levels. She has been teaching English with the Writing Studio for the past 4 years.

Ms. Devapreeta Jena has completed her BA in Sociology from Delhi University and MA in Sociology from Ambedkar University, Delhi. Her master's thesis primarily dealt with the impact of neoliberalisation on Higher Education. Her primary interests include critical theory, Marxism, Psychoanalysis and Women's studies. She has worked with governmental organisations like Niti Aayog and the Ministry of Women and Child Development. She keeps an interest in literature, poetry and philosophical texts. Dr Pierino Lestuzzi did his master's in Civil Engineering from the Ecole Polytechnique Fédérale de Lausanne (EPFL) and his PhD from ETH-Zurich, Switzerland. He was a lecturer and senior researcher at EPFL. He was also president of the norm commission SIA 261 (Swiss standard for actions) and a committee member of the Swiss Society of Earthquake Engineering and Structural Dynamics (SGEB). His primary research interests include Earthquake Engineering, Seismic Risk Assessment and Structural Dynamics. He is now active in the engineering practice by the specialized engineering company Exigo ExpertisesSA in Switzerland.

About the Instructor
Ambassador V. Ashok, IFS, retired in the rank of Secretary, Government of India in October 2018. After graduating in Civil Engineering from IIT Delhi in 1981, he joined the Indian Foreign Service in 1982. He served in various capacities in Hongkong, Malaysia, China, and Sri Lanka. He was India’s Ambassador to Czechia and to the Republic of Zimbabwe. He was the Alternate Governor of India to the IAEA, Vienna, and Consul General to the US West Coast. He is keenly interested in Global Politics, Sustainability, Energy and the Circular Economy and has written articles and blogs on these issues. He has authored a book, Dasavatara – The Ten Avatars of Vishnu. He is a Guest Professor at IIT Gandhinagar and Adjunct Professor, Energy and Environment Programme at NIAS, Bengaluru. He was also a 2018 Garwood Fellow at the University of California, Berkeley , during which period he was an advisor for ‘Smart Village Program’ in Andhra Pradesh and Arunachal Pradesh.

Prof. Mukul Chandorkar has been a faculty member in the Department of Electrical Engineering, IIT Bombay, since 2000. He has B. Tech., M. Tech. and Ph.D. degrees from IIT Bombay, IIT Madras and the University of Wisconsin- Madison, respectively. He specializes in power electronics and electric machines. Before joining IIT Bombay, he worked with power electronics companies in India, the USA and Europe. He is currently on sabbatical leave from IIT Bombay and is a visiting professor at IIT Gandhinagar.

About the Instructor
Professor Sharan obtained his PhD in Electrical Engineering at the University of Waterloo in Canada in 1968. He then joined the Indian Institute of Technology Kanpur in 1969 and remained there till June 2004. From 2004 to 2012, he worked as a distinguished professor at LNMIIT Jaipur. For the last decade, he has been at IIT Gandhinagar and is continuing as Scholar-in-Residence. The undergraduate education of Sharan was at BIT Sindri, from 1957 to 1961, in Telecommunication Engineering. He respectfully and fondly remembers his teachers at Sindri.

Prior to Microsoft, he worked with Amazon in launching 20+ experiments in Address experience for customers worldwide, helping reduce the average time to create/select an address by >20% saving 40K hours daily for customers. In his industry experience spanning over 15 years, he has predominantly worked on product management and product strategy in several organizations such as Amazon, Excelity Global, Altisource and Wipro. Dr. Deepkumar has completed his PhD from IIT Bombay in the areas of Decision Sciences and Entrepreneurship. He has pursued his MBA (PGP) from IIM Ahmedabad and has a B.Tech degree in Electronics and Communications Engineering from IIT, Roorkee. He is a technology enthusiast who loves learning or imparting knowledge across diverse topics.

Jooyoung Kim is an assistant teaching professor and co-coordinator of the Writing Studio at the Indian Institute of Technology Gandhinagar. She received her B.A. and Ph.D. degrees in linguistics from Korea University and the University of Delaware, respectively. Her current research focuses on multilingualism and academic writing, and since 2020, she has developed courses and workshops in English writing and academic communication in the Indian context.
